this is my weekly thursday series where i share the actual dinners that happen in my house as a working mom of two with a 9-5 in austin, tx. not the pretty ones, not the planned ones. the ones i made because i needed dinner on the table and had nothing left in the tank.

the goal isn’t culinary creativity, it’s zero decisions at 5:47pm. your family will eat the same 21 meals on rotation forever and never complain. you just need to find the 21.

Why This Works for Working Moms

i love making crunchwraps. but the anxiety of folding that tortilla at the end of a work day is genuinely too much for me. this casserole version gives you the exact same flavor — beef, cheese, that burger sauce situation — without assembling anything individual. you layer it like a lazy lasagna, bake it, and slice it. it’s actually easier to serve to a whole family this way too.

one baking dish, 30 minutes, done.


Ingredients

the filling

  • 1 lb ground beef
  • 1/2 small onion, diced (optional)
  • salt + pepper
  • 2–3 tbsp ketchup
  • 1 tbsp mustard

the layers

  • 4–6 large tortillas
  • 1–2 cups shredded cheddar or Mexican blend cheese

optional but worth it

  • sliced pickles (inside the layers)
  • crushed tortilla chips (for crunch inside the layers)
  • shredded lettuce (add after baking)

Instructions

  1. preheat oven to 375°F
  2. in a skillet, brown ground beef with onion if using, drain excess grease
  3. stir in ketchup + mustard, season with salt and pepper
  4. lightly grease a baking dish
  5. layer: tortilla (cut to fit) → beef mixture → cheese → optional pickles or chips
  6. repeat layers 2–3 times
  7. finish with a tortilla on top + cheese
  8. bake 20–25 minutes until cheese is melted and edges are slightly crispy
  9. let sit 5 minutes, then slice like a casserole
  10. top with shredded lettuce, extra pickles, and dip in ketchup, mustard, or burger sauce

Working Mom Hacks

make it ahead: cook the beef filling the night before, refrigerate it, then layer and bake the next day. even faster on the actual night.

picky eaters: set the toppings on the side. kids who won’t touch pickles or lettuce will still eat the cheesy beef layer no problem.

crunch factor: crushed tortilla chips inside the layers give you that crunchwrap texture without any extra work. highly recommend.

burger sauce shortcut: equal parts ketchup + mayo + a little mustard + a splash of pickle juice. stir and done.


Easy Variations

bacon cheeseburger version: add bacon bits inside the layers.

“big mac” version: add shredded lettuce + thousand island dressing after baking.

taco crunchwrap bake: swap the ketchup + mustard for taco seasoning + salsa. basically ep 02 of this series lol.
