arugula + feta is chefs kiss 🤌🏼

Ingredients for 2 burritos (double this for some meal prep!)
- 4 eggs (pasture raised vital farms)
- 1/2 cup egg whites
- 2 tbsp feta (love sheep’s milk here!)
- 1/4 cup non fat cottage cheese (love good culture or nancys)
- 2 cups arugula
- dash of salt and pepper
- tortilla of choice – I like Ezekiel sprouted, la tortilla factory organic, siete burrito size or xtreme wellness spinach wraps
- 1 tsp avocado oil or vital farms ghee or (non vegetarian – epic beef tallow)
- 1 tsp chili crunch (I love this olive oil chili crunch, or a few on amazon!)
Directions:
- In medium saucepan over medium heat, add oil/ghee. Add all ingredients except tortilla and scramble in the pan.
- Add to tortilla with chili crunch. Close tortilla into burrito – fold in the sides, roll from the back to the front. Sear the burrito seam side down on the skillet. I let this side cook about 3 mins, flip over and sear for another two.
- Slice in half and enjoy!
For meal prep – wrap in parchment paper, then foil and freeze. To reheat – remove from foil, microwave 2 mins.
