Y’all this combo is SO GOOD. Requires literally zero cooking (besides toasting your bread) and was ready in 5 mins.

Ingredients for 1:

– 1 slice sourdough of choice (I like izzio multigrain, any local sourdough like Easy Tiger Quinoa, or Whole Foods brand)

– 3/4 cup non fat cottage cheese (I like Nancy’s or good culture)

– drizzle of hot honey

– drizzle of balsamic glaze

– 2ish organic grape/cherry tomatoes, sliced

– sprinkle of Maldon salt

– fresh cracked pepper

– crushed red pepper

– Micro arugula / micro greens (ideal so you’re getting more nutrients – these have 5x the nutrients than their larger counterparts. Could also do some basil!

– optional: I used this bruschetta sauce from the farmers market, pesto would be great, or sundried tomatoes diced

Directions:

1. Toast bread.

2. Optional: you can blend the cottage cheese for more of a whipped texture (like ricotta) if you don’t normally love the texture of cottage cheese. I feel like with the toppings I didn’t notice the texture fwiw.

3. Top with sauce of choice & tomatoes.

4. Sprinkle with salt, pepper, crushed red pepper.

5. Drizzle with honey and balsamic glaze.

6. Top with microgreens or basil.
