Tweaking my viral caesar Brussels and gave wedge Brussels a whirl!

Ingredients for 2:

  • 2 cups organic shaved Brussels, best served cold. Can be precooked and refrigerated or served raw.
  • 1/2 cup quartered organic cherry tomatoes
  • 2-3 slices cooked bacon, diced (I like pedersons no sugar added)
  • 1-2 tbsp bleu cheese (less is more here) OR feta (my preference with the brussel taste is actually feta!!!)
  • 2-3 tbsp ranch (I like chosen foods avo based ranch)

Directions:

  1. If cooking Brussels – I season with salt, pepper and olive oil. Then roast on 400 for 20-30 minutes, stirring halfway. Pop in refrigerator (or in a time crunch, freezer). This is definitely best with the Brussels served cold! (My preference)
  2. If serving Brussels raw – hot tip, pop them in the bowl and in the freezer with a paper towel on top for 10 mins before making. Just makes them super crisp to more mimic the wedge style!
  3. In medium bowl or on plate – layer Brussels, tomatoes, bacon, bleu cheese and drizzle of ranch.

I served with my high protein cheeseburger Mac!
