Perfect for fall and a super easy side dish.

Ingredients for 2:
Dressing: juice of half a lemon, 1 tbsp olive oil like graza, sprinkle of salt & pepper, 1 tsp Dijon mustard
3 cups arugula
1/2 organic apple, diced
2 tbsp chopped organic walnuts (optional: lightly toast in a pan over medium low heat for 3-4 mins)
3 tbsp parm

Directions:

Mix dressing in bottom of bowl (hack to not use more dishes), add remaining ingredients on top and toss!
