Perfect for fall!

Ingredients for 4:

  • Pancake mix of choice – I love simple mills as a clean grain-free option, or Kodiak cakes for a higher protein option. Mix as directed for 4 people.
  • 1/4 cup organic pumpkin
  • 1/2 cup greek yogurt, love stonyfield Grassfed
  • 2 tbsp cream cheese (look for Greek cream cheese for higher protein!)
  • 2 tbsp organic maple syrup
  • dash of cinnamon
  • 1 tbsp grass fed butter or 1/2 tbsp avocado oil
  • 1/4 cup pecans

Directions:

  1. Preheat skillet over medium high heat. Add butter or oil.
  2. Whisk pumpkin & the pancake mix (with applicable added ingredients) in large bowl.
  3. Pour each pancake on to griddle. I use a 1/4 measuring cup and it makes them the perfect size!
  4. Flip after 3-4 mins. Cook until toothpick comes out clean.
  5. In small bowl, mix softened cream cheese (I zap in microwave for about 10 seconds), Greek yogurt, maple syrup and cinnamon.
  6. Layer pancakes with yogurt mixture and top with pecans.
