Ingredients for 2:

  • 3-4 parsnips, peeled and chopped
  • 1 tbsp grass-fed butter
  • 1/4 cup raw milk (or grass fed milk)
  • 1 tbsp fresh thyme (or rosemary), chopped
  • Salt and pepper to taste
  • Optional: a garlic clove
  • Optional: 1 carton bone broth as cooking liquid (to increase protein!)

Instructions:

  1. Boil the Parsnips: Bring a large pot of salted water or bone broth to a boil. Add the peeled and chopped parsnips and garlic clove and cook for 10-15 minutes, or until fork-tender.
  2. Mash the Parsnips: Drain the parsnips and return them to the pot. Add the butter, milk, salt, and pepper.
  3. Blend for Creaminess: Use a potato masher or hand blender to mash the parsnips until smooth and creamy. Add more milk if needed to reach your desired consistency.
  4. Add Herbs: Stir in the chopped fresh thyme or rosemary and the optional garlic powder for an extra burst of flavor.
  5. Serve and Enjoy: Garnish with a drizzle of melted butter and an extra sprinkle of herbs before serving. Enjoy alongside roasted meats, fish, or as a stand-alone side!

Why Parsnips? Parsnips are a great source of fiber, vitamin C, and potassium, making them a healthy and nutrient-dense option. They have a slightly sweet, nutty flavor that pairs perfectly with the richness of grass-fed butter and the earthiness of fresh herbs.

This parsnip mash is perfect for a comforting fall dinner or as a unique holiday side!
