A high-protein, flavor-packed dinner that’s quick, creative, and actually delicious!
Ingredients:
For the Crispy Salmon:
- 1 lb salmon, cubed (ideally wild caught)
- 1 tbsp Dijon mustard
- 1 tsp harissa (can also sub 1/4 tsp cayenne pepper)
- 1 tsp minced fresh ginger (great for digestion! Can also sub dried ginger)
- 1 tbsp coconut aminos or soy sauce
- Salt & pepper to taste
For the Mango Salsa:
- 1/2 cup diced mango (pre-cut to save time!)
- 1/2 cup pre-made pico de gallo or
- 1/2 tomato (or 3-4 cherry tomatoes), diced
- 1 mini cucumber, diced
- 1 slice red onion, diced
- 1 tbsp chopped cilantro
- Juice of 1/2 lime
- Salt & pepper to taste
Other Toppings & Tortillas:
- 4-6 tortillas (La Tortilla Organic or Siete Grain-Free)
- 1/2 avocado, sliced
- 1-2 tbsp store-bought aioli (Primal Kitchen Yum Yum Sauce works great!)
- Drizzle of hot honey
Instructions:
- Prep the Salmon:
- Preheat oven to 500°F.
- In a bowl, mix cubed salmon, Dijon mustard, harissa, ginger, coconut aminos, salt, and pepper.
- Spread evenly on a parchment-lined baking sheet.
- Bake for 7 minutes, then broil for 1 minute for extra crispiness.
- Prepare the Tortillas:
- Lightly heat tortillas on the stove or in the microwave until warm and pliable.
- Make the Mango Salsa:
- Mix mango, pico de gallo (or diced tomato mix), lime juice, salt, and pepper in a small bowl.
- Assemble the Tacos:
- Spread aioli on each tortilla.
- Add crispy salmon and mango salsa.
- Top with sliced avocado and a drizzle of hot honey.
- Serve & Enjoy!
- Best eaten fresh, but leftovers can be stored separately and reheated!
