Ingredients (serves 2)
For the steak & salad:
- 10-12 oz sirloin or flank steak, cubed
- 2-3 cups arugula
- Optional salad toppings: diced apple & parm or shredded white/raw cheddar
- 3-4 tbsp chimichurri (recipe below)
- Lemon juice
- Olive oil
- Salt & pepper
For the crispy parm potatoes:
- 1 cup baby potatoes
- Olive oil
- Salt & pepper
- 2 tbsp shredded parmesan
Crispy Parm Potatoes (Shortcut Method)
- Microwave baby potatoes for 5 minutes until fork-tender.
- Transfer to a sheet pan, drizzle with olive oil, salt, and pepper.
- Smash each potato with the back of a fork.
- Top with parmesan and broil for 3–4 minutes until crispy and golden.
Small-Batch Chimichurri (Makes ~4 tbsp)
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh cilantro, finely chopped (optional)
- 1 small garlic clove, minced
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Pinch red pepper flakes
- Salt & pepper to taste
Instructions:
- Stir all ingredients together in a small bowl until combined.
- Let sit at least 10 minutes before serving for flavors to meld.
Steak Bites
- Heat olive oil in a skillet over medium-high heat.
- Season steak bites with salt and pepper.
- Sear for 2–3 minutes per side until your desired doneness.
Assembly
- Toss arugula with lemon juice, a drizzle of olive oil, and a pinch of salt. Top with apple & parm or cheddar.
- Plate arugula, top with steak bites, and drizzle with chimichurri.
- Serve with crispy parm potatoes on the side.
