If you’re stuck in the “what’s for dinner again?” loop, this is exactly the kind of meal that saves busy weeknights.

This baked feta gnocchi with sausage and spinach is part of my Dinner Rut Diaries series where I share the quick, realistic dinners I actually make as a working mom of two.

It’s cozy, high-protein, and comes together in one baking dish with almost no prep. You basically toss everything in the pan, bake it, stir it into a creamy feta tomato sauce, and dinner is done.

Even better: the leftovers are amazing for lunch the next day.


Why This Dinner Works for Busy Families

This recipe has become one of my go-to weeknight dinners because it checks all the boxes:

  • One dish meal
  • High protein
  • Minimal prep
  • Kid friendly
  • Meal prep friendly

It’s also incredibly forgiving. You can add extra tomatoes for more sauce, stir in marinara if you want it creamier, or add chili flakes if you like a little heat.


Ingredients

  • 1 block feta (8 oz)
  • 1 pint cherry tomatoes
  • 1 lb shelf-stable gnocchi
  • 1 lb Italian sausage
  • 2 cups baby spinach
  • 3 cloves garlic
  • olive oil
  • salt + pepper
  • optional chili flakes

Optional additions

  • splash of marinara for extra sauce
  • crushed red pepper for heat

How to Make Baked Feta Gnocchi

Preheat oven to 400°F.

In a baking dish add:

  • cherry tomatoes
  • garlic
  • drizzle of olive oil
  • salt and pepper

Nestle the block of feta in the center.

Scatter around the dish:

  • gnocchi
  • small dollops of raw Italian sausage

Bake for about 20 minutes.

Remove from oven and smash the feta and roasted tomatoes together into a creamy sauce. Stir everything to coat the gnocchi.

Add the baby spinach (it will wilt quickly). If you want a saucier dish, stir in a splash of marinara.

Return to the oven for 5 more minutes.

Serve warm and top with chili flakes if you like a little spice.


Protein Content

This dinner lands around 35–40g of protein per serving, making it a great balanced option for a cozy weeknight meal that still keeps you full.


Meal Prep Tip

This dish reheats really well.

I actually ate the leftovers for lunch the next day and the flavors were even better after sitting overnight.
