I have been obsessed with lavender matcha latte’s for several years now, and have been on a mission to make one at home that doesn’t use lavender syrup/cane sugar. I finally perfected this recipe, and with the addition of lions mane, it truly makes it a superfood latte!

Ingredients:

  • Matcha strainer and whisk – KEE to making a super smooth latte. When I was making them before without it, the matcha was super chunky which is no fun!
  • 1 tbsp Ceremonial grade matcha – Matcha in general has 10x the antioxidants of regular green tea, and l-theanine which gives a calming buzz. Ceremonial vs. culinary grade matcha has the highest level of chlorophyll (great for detoxification), and l-theanine. Rich in amino acids and antioxidants!
  • ~2 oz hot water
  • 6-8 oz Malk (or clean ingredient nut milk like elmhurst. Three trees is another great brand but it doesn’t froth as well as I’d like).
  • Optional: 2 oz Raw Milk – I’ve been doing a mixture of 6 oz malk + 2 oz Raw Milk and it is SO CREAMY and FULL of nutrients. Raw Milk is unpasteurized. The pasteurization process requires heating milk to very high temps which is what kills off a lot of the great nutrients. This process is also what can sometimes cause the dairy sensitivities that we can experience. I get mine from Local Pastures here in Austin – check out local farms in your area or farmers markets to find this!
  • 1 tsp Lavender Honey (Can also make your own by grinding some dried lavender, plus 1 tsp local honey. This one is non-GMO and unfiltered!)
  • 1 tsp date syrup (low glycemic index meaning no blood sugar spike, nice way to add sweetness from a natural source vs. sugar. This one is 100% organic!)
  • Dash of ceylon cinnamon (ceylon vs. traditional cassia at the grocery store – cassia contains a lot of coumarin which can be toxic to the liver in large quantities. Ceylon specifically supports health cholesterol, boosts memory, protects brain, supports healthy blood sugar, and is anti-inflammatory)
  • 1 tsp Lions Mane (Benefits: great for immune system, brain function, memory, reduces inflammation, healthy cell recovery and mood boost)

Directions:

  1. Heat water separately (I use an electric tea kettle but you could easily microwave for 15 seconds). Add 1 tbsp matcha to the strainer over your mug, shake until matcha has been sifted through. Use matcha whisk to whisk it with the warm water. This is KEE to a smooth latte. Option to add dried lavender with the matcha for more vibrant flavor.
  2. Add milks, date syrup and cinnamon. Microwave 1 min 30 seconds. Could also use a standalone milk frother and heat these together in that.
  3. Add lions mane and honey and stir. I like doing this AFTER the microwaving – it makes the lions mane taste better in my opinion (when I was adding it before microwaving it almost tasted burnt), and adding honey to a non-piping hot drink ensures that you’re not killing off all the great nutrients!
