Love this viral recipe! It was honestly SO easy and great for a weeknight meal.
Ingredients for 2 people:
– 2 siete almond flour tortillas (the highest protein of all of their tortillas) OR La tortilla factory organic for a higher fiber option
– 1/4 onion, diced
– 2 siete crispy taco shells
– 2 oz shredded cheddar (I love raw cheddar here! Way more nutrients than a pasteurized cheese. High heat pasteurization can kill a lot of the nutrients!)
– 1 cup organic shredded lettuce (iceberg or romaine), slice into shreds!
– high protein crema sauce: 4 tbsp/ 1/4 cup non fat greek yogurt + 1 tsp hot sauce (I used Cholula). Can add more here for a spicier sauce
– 8-12 oz grass fed AND finished ground beef
– taco seasoning (OR: 1 tsp salt, 1 tsp black pepper, 1/4 tsp cayenne pepper, 1 tsp onion powder, 1/4 tsp garlic powder, 1/4 tsp oregano, 1 tsp cumin, 1 tsp paprika, 1/2 tbsp chili powder)
– optional: 1/2 tbsp tomato paste
Directions:
1. Sauté onion and ground beef in skillet over medium heat. Sprinkle half the seasoning while cooking. Add 1/2 cup water + tomato paste + rest of seasoning. Turn heat to medium high. Pop a lid on it and let the water cook down (should be majority evaporated but meat should still be juicy & not dry).
2. Place your tortillas on each plate and top with shredded cheese. Make sure the whole tortilla is covered all the way to the edges. Pop in microwave about 30 seconds or until cheese is melted.
3. Place taco shell on each tortilla. Can fold the tortilla around it to let the melted cheese sort of attach to the taco shell.
4. Mix crema – yogurt + hot sauce.
5. In each taco – add ground beef, lettuce and crema.
