When you’re postpartum, the last thing you need is a complicated meal. This one-pan salmon dinner is packed with omega-3s, minerals, and anti-inflammatory ingredients to support healing, hormone balance, and energy—all with minimal effort!

Ingredients (Serves 2)
Salmon:
- (2) 5-oz wild-caught salmon filets
- 1 tbsp butter, melted
- Zest of 1 lemon
- 1/2 tsp Redmond’s mineral salt
- Black pepper to taste
Roasted Brussels & Butternut Squash:
- 1 cup Brussels sprouts, sliced
- 1 cup butternut squash, cubed
- 1 tsp beef tallow, melted
- 1/2 tbsp olive oil
- 1/2 tsp Redmond’s mineral salt
- 1/4 tsp black pepper
- 1/2 tsp ground ginger
- 1/2 tsp ground turmeric
Bone Broth Orzo:
- 1/2 cup orzo (or GF alternative)
- 1 1/2 cups bone broth (Bonafide brand)
- 1/4 tsp Redmond’s mineral salt
- 1/4 tsp black pepper
- 1/4 tsp ground ginger
Instructions
1️⃣ Roast the Veggies
- Preheat oven to 450°F.
- Toss Brussels & butternut squash with beef tallow, olive oil, salt, pepper, ginger & turmeric.
- Spread on one side of a sheet pan and roast for 15-20 minutes.
2️⃣ Cook the Orzo
- In a small pot, bring bone broth to a simmer.
- Stir in orzo, salt, pepper & ginger.
- Simmer 8-10 minutes, then remove from heat.
3️⃣ Broil the Salmon
- Place salmon filets on the empty side of the sheet pan with the veggies.
- Brush with butter, sprinkle with lemon zest, salt & pepper.
- Broil for 5-7 minutes until flaky.
4️⃣ Serve & Enjoy
- Plate everything together & drizzle with extra lemon juice if desired.
