Why You’ll Love This Salad
If you’re looking for something easy, protein-packed, and actually satisfying for lunch (or honestly, dinner), this chopped Italian salad hits the spot. It’s the kind of meal that doesn’t require much thought, can be prepped in under five minutes, and uses ingredients you probably already have on hand.
This is a true “real-life” recipe. Nothing fussy. Just bold flavor, crunch, and a little bit of everything in each bite. The crushed chips on top? Trust me, don’t skip them.
Ingredients
- 3 oz Applegate nitrate-free deli turkey
- 1 oz Applegate turkey pepperoni
- ½ oz Raw Farm raw cheddar or shredded mozzarella
- 2–3 cups arugula
- ¼ cup roasted red pepper or tomato
- 1/4 cup pepperoncinis
- ¼ cup chickpeas
- 1 tbsp Side Dish Greek Vinaigrette
- OR
- 1/2 tbsp Ayoh Dill Mayo + 1/2 tbsp Primal Kitchen Caesar Dressing (the combo is SO GOOD)
- 2–3 Boulder Canyon avocado oil kettle chips, crushed
Directions
- Chop all ingredients finely so every bite has a little bit of everything.
- Toss with dressing.
- Top with crushed chips.
- Serve immediately and enjoy.

Why I Love It
This one checks all the boxes — high protein, balanced, and so customizable. Swap the turkey for rotisserie chicken, use romaine instead of arugula, skip the chickpeas if you’re lower carb, or add more if you’re feeding a crowd. I’ve even added cooked pasta to this for a “pasta salad hybrid” vibe and it totally works.

- Dressing: I’m obsessed with the Side Dish Greek one for clean ingredients, but any vinaigrette works. OR the Ayoh Dill Mayo + Primal Kitchen Caesar combo.
- Chips: These Boulder Canyon avocado oil kettle chips give the perfect crunch and flavor boost. And seed oil free!
- Cheese: Mozzarella is classic, but I also love using a little shredded parm if I have it.
How to Make It Work for Meal Prep
Chop everything ahead of time and store dry in one container. Keep your dressing and chips separate. When you’re ready to eat, toss and top — it takes literally one minute.
