It’s hearty, nourishing, and layered with Mediterranean-inspired flavors — juicy meatballs simmered with couscous, eggplant, tomatoes, and bone broth, then finished with a touch of cream. Topped with fresh romaine, cucumber, and feta, it’s a full meal in one bowl that the whole family will love.
This recipe is also high in protein (~33g per serving) and fiber, naturally gluten-free if you use gluten-free couscous, and super meal-prep friendly.
Ingredients (Serves 2–3)
- 10 frozen meatballs (I used Force of Nature beef meatballs, but turkey or plant-based work too)
- ½ cup dry couscous (yields ~1 ½ cups cooked)
- 1 small eggplant, diced
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil
- 1 cup bone broth (or vegetable broth)
- 2 tbsp heavy cream (or coconut cream for dairy-free)
- 1 tsp Italian seasoning
- 2 cups romaine lettuce, chopped
- 1 small cucumber, diced
- Juice of ½ lemon + drizzle of olive oil
- 2 tbsp feta cheese
Instructions
- Sauté Veggies: Heat olive oil in a skillet over medium heat. Add diced eggplant and cook 6–8 minutes until softened. Add cherry tomatoes and season with Italian seasoning.
- Cook Meatballs: Add frozen meatballs directly to the pan. Cook until warmed through (pan-fry or cover for faster cooking).
- Add Couscous & Broth: Stir in couscous and pour in bone broth. Cover and simmer 5 minutes until liquid is absorbed and couscous is fluffy.
- Finish with Cream: Stir in cream and mix everything together.
- Assemble Bowls: Layer romaine and cucumber in bowls. Spoon the couscous-meatball mixture on top. Drizzle with lemon juice and olive oil. Finish with feta.
