if you have ever walked in the door after work with zero brain power left and no idea what is for dinner, this one is for you. this lasagna baked orzo is the kind of meal that gives you all the cozy, cheesy, lasagna comfort with none of the boiling, layering, or standing at the stove. you dump everything in one dish, the orzo cooks right in the sauce, and the oven does the rest.
this is Episode 05 of Default Dinner Diaries, my series where i share the real dinners that actually happen in my house as a working mom of two with a full-time 9-5. no cooking show, no 17 ingredients, just the meals that require zero decisions at 5:47pm and somehow the whole family still eats.
Why This Lasagna Baked Orzo Works
the orzo cooks right in the sauce: no boiling a separate pot, no draining, no extra dish. you add it uncooked and it soaks up the broth and marinara as it bakes.
marinara plus a splash of cream equals instant lasagna vibes: you get that rich, creamy, red-sauce comfort without layering a single noodle.
rotisserie chicken is effortless protein: already cooked, already seasoned, just shred and stir it in. no browning, no thinking.
cheese on top: obviously. mozzarella for the pull, parmesan for the salty edge.
Ingredients
- 1 cup uncooked orzo
- 1 ½ cups chicken broth
- 1 cup marinara sauce
- ¼ cup heavy cream (or sub half & half, or stir in a scoop of Greek yogurt after baking)
- 1–2 cups shredded rotisserie chicken (or cooked ground beef or Italian sausage)
- 1 cup shredded mozzarella
- ¼ cup parmesan
- 2 cloves garlic (or 1 tsp pre-minced)
- 1 tbsp olive oil
- salt + pepper
How to Make It (Very Low Effort)
- preheat the oven to 400°F.
- in a baking dish, add the uncooked orzo, chicken broth, marinara, cream, garlic, olive oil, and a pinch of salt and pepper. stir once.
- cover tightly with foil and bake for 25 minutes.
- remove the foil, stir, then mix in the shredded chicken.
- top with the mozzarella and parmesan.
- bake uncovered for 5–10 more minutes, until the cheese is melty and slightly golden.
that is it. one dish, about 35 minutes, mostly hands-off.
Easy Upgrades (If You Want to Switch It Up)
ricotta swirl (lasagna vibes x100): add dollops of ricotta before the final bake.
spicy sausage version: swap the chicken for ground Italian sausage.
hidden greens: stir in a handful of spinach at the end, it wilts instantly.
vodka sauce version: use vodka sauce instead of the marinara + cream.
Frequently Asked Questions
Do I have to cook the orzo first?
nope, that is the whole point. you add it uncooked and it cooks right in the broth and marinara while it bakes. no boiling a separate pot.
Can I use ground beef or sausage instead of rotisserie chicken?
yes, just brown it first and stir it in when you stir in the chicken step.
How do I keep the orzo from getting mushy?
keep the foil on tight for the full 25 minutes so it absorbs the liquid evenly, then uncover to let the top brown. don’t skip the foil.
Can I make it a little lighter?
sub half & half for the cream, or leave the cream out and stir a scoop of Greek yogurt in after it comes out of the oven.
Can I make it ahead?
it is best fresh, but leftovers reheat great with a splash of broth or water to loosen it back up.
What size baking dish?
an 8×8 or a small 9×13 works well, you just want the orzo spread in roughly one layer so it cooks evenly.

Want to Stop Thinking About Dinner Completely?
this orzo is just one of the defaults on my list. but the real fix was never a single recipe, it was having a whole list i never have to think about again, so dinner is already decided before i even walk in the door at 5:47pm. that is exactly what i built Dinner OS for, it is the system i actually use to take the mental load of dinner off my plate for good.
