i’m a working mom of two with a full-time 9-5, and by the time i walk in the door at 5:47pm my brain is completely done, so i started keeping a list of the dinners that just work. no decisions, no thinking, just default. this one earns its spot for one reason: there is an entire vegetable hidden inside it and my kids have never once caught me.

welcome to default dinner diaries ep 06, the sneaky veggie sloppy joe biscuit bake. it’s one dish, about 25 minutes, and it’s the dinner i make when everyone’s melting down and i need food on the table with zero veggie negotiations.

why this sneaky veggie sloppy joe biscuit bake works for busy moms

most weeknights i do not have it in me to plate a vegetable and then argue about it for 45 minutes. so instead of fighting the battle, i skip it entirely. i shred carrots really fine and cook them right into the sloppy joe meat, where they melt into the sauce and disappear. no weird texture, no green flecks, no negotiation. the kids get a real serving of vegetables and they think they’re just eating sloppy joes.

it’s also a true default dinner: pantry-friendly ingredients, one skillet plus one baking dish, and a 20 to 25 minute bake while you handle everything else that’s happening at 6pm. you are not following a recipe so much as assembling one.

  • 1 lb ground beef
  • 1/2 small onion, diced (optional)
  • 1/2 to 1 cup finely shredded carrots

  • 1 can refrigerated biscuits, halved (you won’t need the whole can, just enough to cover the top)
  • 1 to 1.5 cups shredded cheddar cheese

how to make it

  1. preheat the oven to 375°F.
  2. brown the ground beef in a skillet (add the onion now if you’re using it).
  3. once it’s mostly cooked, stir in the shredded carrots and cook 3 to 4 minutes until softened. this is the key step, it’s what lets them blend into the sauce so they don’t feel crunchy.
  4. stir in the sloppy joe sauce and let it simmer 2 to 3 minutes.
  5. transfer the meat to a square baking dish. the smaller pan keeps the beef layer nice and thick.
  6. sprinkle the cheese over the top, then add the biscuits cut into halves or quarters across the top.
  7. bake 20 to 25 minutes, until the biscuits are golden and cooked through.

that’s the whole thing. everyone cleared their plates, nobody picked anything out, and i got vegetables in them without a single fight.

the sneaky veggie trick (and other swaps that disappear)

carrots are the move here because they’re slightly sweet, so they actually make the sloppy joe taste a little better, and once they’re finely shredded and cooked into the sauce nobody at my table has ever noticed. if you want to rotate the hidden vegetable, these disappear the exact same way:

  • finely grated zucchini (squeeze out the extra water first)
  • riced cauliflower mixed straight into the meat
  • chopped spinach, which wilts down to nothing

the rule of thumb for hiding any vegetable from a picky eater: small + cooked = invisible.

make it ahead, freeze it, or stretch the leftovers

you can make the meat mixture (with the carrots already cooked in) up to 2 to 3 days ahead and keep it in the fridge, then just top with biscuits and cheese and bake when you’re ready. the meat also freezes well on its own. leftovers of the full bake keep 3 days in an airtight container and reheat in the microwave.

a quick note on protein

a pound of ground beef across the dish gives you a solid hit of protein per serving, which is the part that actually keeps everyone full until bedtime instead of asking for a snack at 7:15. if you want to push the protein higher, you can do a mix of ground beef and lean ground turkey, or stir in a can of rinsed beans with the sauce.
