So quick, minimal ingredients and about 20g of protein!
Ingredients for 2 toasts (1 serving):
– 2 Strong Roots Sweet Potato Toasts, I get at sprouts (or a two 1/2” inch sliced sweet potatoes, microwaved for 30 seconds first)
– 1/2 avocado
– 1/4 cup cottage cheese, I love good culture non fat
– 2 eggs, I love vital farms pasture raised (3x the nutrients)
– salt & pepper
– optional: chili crunch oil, I love the Trader Joe’s olive oil based
Directions:
1. In small sauce pan, boil water. Season with salt.
2. Add sweet potato toasts to toaster. I toasted twice on the 4 setting. Can also pop in the air fryer for 10 mins.
3. In boiled water, swirl a spoon to create a little whirl pool. This is how you perfectly poach an egg. Carefully crack an egg into your whirlpool. Then add second egg. This will poach in about 2 mins. Remove with slotted spoon and set on paper towel lined plate.
4. Add cottage cheese and avocado to small bowl and mash with a fork. Lightly season with salt and pepper.
5. Add avocado mixture to tops of sweet potato toasts. Add poached egg on top of each. Drizzle with chili oil.
