Packed with veggies and four types of protein!
Ingredients for 2 portions:
– 3.5 oz chickpea macaroni (Heb organics has a cheap brand)
– 1 can tuna in water (I like wild planet), can double this up if you want!
– 1/2 cup non fat grass fed Greek yogurt (I like stonyfield)
– 1/4 cup yellow mustard
– 1/4 cup Italian dressing, I like primal kitchen
– 1 tsp salt (I like Redmonds mineral salt)
– 1 tsp pepper
– 3 organic mini sweet peppers or 1 bell pepper (feel free to use what veggies you have on hand!)
– 1 cup organic broccoli, finely chopped
– 2 pasture raised hard boiled eggs, chopped (I like vital farms or central market brand)
Directions:
1. Boil water. Cook pasta according to directions – mine took 4 minutes. Strain and set aside.
2. While pasta cooks, chop your broccoli, peppers and egg.
3. In large bowl, combine all ingredients and mix well. Season to taste.
I like this for meal prep and will eat it for up to 3 days in the fridge and served cold.
