She’s high-protein. She’s no-cook. She’s giving summer in under 5 minutes.
If you’re in your peach era, this one’s for you. Whether you’re burnt out on eggs or just need something quick, high-protein, and ridiculously cute for breakfast, this peach toast is about to be your new obsession.
No cooking, no blending, no mess. Just a few fresh ingredients stacked on toast with summer vibes in every bite. Oh, and protein? She understood the assignment.
High-Protein Peaches Toast Recipe
Ingredients:
- 1 slice of toasted sourdough (Easy Tiger is my go-to if you’re in Austin)
- Optional but life-changing: grass-fed maple cinnamon butter (like Churn Foods)
- 1 ripe peach, sliced
- 1/4 to 1/2 cup cottage cheese (I use Good Culture)
- Drizzle of high-quality olive oil (like Graza)
- Balsamic glaze
- Hot honey (such as Mike’s Hot Honey)
- Flaky sea salt (I love Maldon)
Instructions:
- Toast your sourdough until golden and crisp.
- If using, spread a thin layer of maple cinnamon butter over the toast while it’s warm.
- Top with cottage cheese and sliced peaches.
- Drizzle olive oil, balsamic glaze, and hot honey.
- Finish with a sprinkle of flaky sea salt.
That’s it. She’s stunning. She’s easy. And she’s packing protein without a single pan.
Why I Love This:
- It hits the sweet-savory-salty trifecta
- It’s packed with protein from the cottage cheese
- It looks beautiful (read: Instagrammable)
- It takes less than 5 minutes
Bonus Tips:
- Swap in whipped ricotta or Greek yogurt if cottage cheese isn’t your thing
- Add fresh basil or mint for extra flavor
- Serve with a hard-boiled egg on the side if you want even more protein. I usually add 2-3 scrambled eggs.
