ok so i’m a working mom of two with a full time 9-5, and i only plan two actual recipes a week. everything else is a freezer backup or a dump and bake i can walk away from, and this one is very much the second kind!!

no boiling, no colander, no standing at the stove stirring. you put a bag of refrigerated stuffed gnocchi straight in a dish with sauce and a splash of milk, pile cheese and pepperoni on top, and the oven handles it from there. it tastes like pizza, it eats like a real dinner, and every single plate at my table was clean 🤍

💡 Why This One Works

  • stuffed gnocchi is already pasta plus filling. you’re not boiling it, draining it, or making a sauce. the hard part came in the bag.
  • milk plus jarred sauce turns creamy. i almost skipped the milk the first time and i’m so glad i didn’t, it’s what makes this taste like a real baked pasta.
  • one dish. the dish you bake it in is the dish you serve out of, and that’s the whole appeal on a tuesday.
  • my kids didn’t ask what it was. it tastes like pizza, so they just ate it. iykyk 😂

🛒 Ingredients

  • refrigerated stuffed gnocchi, cheese or four cheese
  • marinara or pizza sauce
  • milk
  • shredded mozzarella
  • pepperoni, or cooked sausage

optional: italian seasoning, diced bell peppers or mushrooms, parmesan on top.

👩‍🍳 Directions (literally dump + bake)

  1. preheat the oven to 375°F.
  2. put the gnocchi straight in the baking dish. do not boil it, i promise.
  3. add the sauce and the milk.
  4. stir gently so every piece gets coated, gnocchi loves to clump in the bag so break those up now.
  5. pile on the mozzarella and the pepperoni.
  6. cover with foil, bake 20 minutes.
  7. uncover and switch the oven to broil for 2 to 3 minutes, just until the pepperoni curls and crisps up at the edges. stay right there and watch it, broil goes from perfect to burnt fast 👀
  8. let it sit 5 minutes before you serve it. the gnocchi keeps drinking sauce while it rests and that’s how you get the texture right 👀

🔥 Two Things I Got Wrong the First Time

i adapted this from a baked ravioli and gnocchi does not behave the same way at all, so learn from me here:

more milk. gnocchi drinks way more liquid than ravioli. i started at half a cup and it came out tight and pasty. three quarters is the number. if it still looks dry going in the oven, add another splash, you really can’t overdo it.

less bake time. a ravioli bake wants 25 minutes covered. gnocchi is already soft when it goes in, so 20 is plenty, and if you push it longer the pieces start falling apart on you.

🍕 Easy Variations

supreme pizza version

cooked sausage, diced peppers and onions, all in before the cheese goes on.

chicken bacon ranch version

swap half the marinara for ranch, then add shredded rotisserie chicken and bacon.

extra cheesy version

spoon dollops of ricotta across the top before you cover it. so good.

sneaky veggie version

blend veggies into the sauce, or dice zucchini really fine and stir it in with the gnocchi. nobody at my table has ever caught this one lol.

🙋‍♀️ Questions I Get About This One

do i have to boil the gnocchi first?
nope, and that’s the entire point. refrigerated stuffed gnocchi cooks through in the sauce and milk while it bakes.

can i use shelf stable gnocchi instead of refrigerated?
you can, it’s just drier and firmer, so add another quarter cup of milk and keep an eye on it at the end. refrigerated is what i buy and it’s way more forgiving.

can i use plain gnocchi instead of stuffed?
yes, you just lose the cheese filling so it won’t be as filling. add ricotta or extra mozzarella to make up for it.

why milk, why not just more sauce?
sauce on its own bakes down heavy and acidic. the milk loosens it and turns the whole dish creamy, which is the pizza pasta thing everyone comments about 👀

mine came out soupy, what happened?
give it the 5 minute rest before you decide, gnocchi keeps absorbing after it leaves the oven. if it’s still loose after that, it wanted another couple minutes under the broiler.

can i make it ahead?
assemble it, cover it, park it in the fridge for a few hours, then add about 5 minutes to the covered bake time since it’s going in cold.

can i freeze leftovers?
yes, the texture softens a bit. reheat covered at 350°F with a splash of milk and it comes back.

will picky kids eat this?
mine did, and mine are picky. it tastes like pizza so there’s nothing to negotiate about.
