10 Easy High Protein Soups for Busy Weeknights
I’m a working mom of two with a full time 9-5, and I only cook two actual recipes a week, so once it gets cold one of those two is almost always a soup bc it’s one pot and it makes enough for leftovers. These are the ten I keep coming back to, from the 15 minute tomato bisque for nights I have nothing left to the chicken soup that comes out the second someone in our house is sniffling.
Tap the heart to save the ones you want to try, change the servings and every ingredient updates for you, and pin any of them to your Pinterest board for later!

1Healing Chicken Soup
This is my go-to when someone in our house is sniffling, recovering, or just needs something grounding. Ginger, turmeric, bone broth, sweet potatoes and kale, creamy from coconut milk without being heavy, and it reheats even better the next day.
Show the recipe
Ingredients
Directions
- Heat butter or olive oil in a large heavy-bottomed pot over medium-high heat. Add the chicken and cook 3-5 minutes per side until lightly browned. Remove and set aside.
- In the same pot, add onion and celery. Cook 5-7 minutes until softened and translucent. Add garlic and ginger and sauté 1 minute until fragrant.
- Return chicken to the pot. Add sweet potatoes, broth, thyme, salt, pepper, bay leaf and turmeric. Stir well. Cover and simmer on medium-low 30-40 minutes, until the chicken shreds easily.
- Remove chicken and shred with two forks (or use a stand mixer with the paddle attachment, life hack). Return it to the pot.
- Stir in coconut milk and kale and cook 2-3 minutes until the kale wilts. Add lemon juice, taste, and adjust seasoning.
Instant Pot: Use 4 cups broth instead of 5. Brown and sauté on Sauté mode, add everything except the coconut milk, kale and lemon, cook on Manual (High) 15 minutes, release, then shred and stir in the coconut milk, kale and lemon.
Slow cooker: Brown and sauté on the stovetop first. Move everything except the coconut milk, kale and lemon to the slow cooker, cook on High 4 hours or Low 6-8 hours, then shred and stir in the rest.
Tips: Use bone broth for extra protein. Swap kale for spinach if that's what you have. Add white rice to make it heartier. Freeze it without the kale for the best texture.

315 Minute Bone Broth Tomato Bisque
For the nights I have nothing left. Minimal ingredients, one can of tomatoes, and it pairs with any grilled cheese or protein-packed sandwich you've got.

Ingredients
Directions
- In a large pot, heat butter and oil. Add onion, carrot and garlic and sauté about 3 minutes until soft.
- Add tomatoes, bone broth and seasonings. Bring to a boil, reduce to a simmer, cover and let it go 10-15 minutes.
- Take it off the heat and stir in the cream. Blend with an immersion blender, or in batches in a regular blender with the small top opening vented so the hot soup doesn't pop the lid off!!
- Top with parm and basil.

9Purple Sweet Potato Bisque
Purple sweet potatoes got a lot of attention from the blue zones research on Okinawa, and they make the prettiest bowl of soup you will ever make. I get mine at Central Market, Whole Foods or Sprouts.

- Stir in the cream and season to taste.
- Serve drizzled with olive oil and cream, sprinkled with pumpkin seeds, with toasted sourdough.

What the leftovers go in
Leftover soup turns into lunch, and these are the two I’d grab for that. Thermos Funtainer kids food jar and the bento box with the 8 oz soup thermos.
Soup night is the one night I’m not standing at the stove at 5:30 trying to finish five things at once, it simmers while I’m on the floor with my kids, and that’s honestly the whole reason it’s in the rotation.
If you want the other nights decided for you too, the Dinner Bundle is my Dinner OS plus the Default Dinner Diaries cookbook in one.
