i’m a working mom of two with a full-time 9-5, and by the time i walk in the door at 5:47pm my brain is completely done, so i started keeping a list of the dinners that just work, no decisions, no thinking, just default.
this is one of them.
crispy dumpling bake. one pan, 25 minutes, the oven does everything. my whole family ate every single bite and it’s in the rotation forever.
What Is Default Dinner Diaries?
this is my weekly thursday series where i share the actual dinners that happen in my house as a working mom of two with a 9-5 in austin, tx. not the pretty ones, not the planned ones. the ones i made because i needed dinner on the table and had nothing left in the tank.
the goal isn’t culinary creativity, it’s zero decisions at 5:47pm. your family will eat the same 21 meals on rotation forever and never complain. you just need to find the 21.
this one earned its spot.
Why This Works for Working Moms
the dumplings are already seasoned, already have protein, already have flavor built in. the coleslaw mix is pre-shredded. the oven does the crisping. you are essentially just assembling and walking away, which is the only kind of cooking that works at 5:47pm after a full day of work.
no standing at the stove flipping dumplings. no separate side dish. full meal, one pan, done.
Ingredients
- 1 bag frozen dumplings (potstickers or gyoza — chicken or pork)
- 1 bag coleslaw mix
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1–2 cloves garlic (or pre-minced)
- 1–2 tsp rice vinegar
- 1 tbsp oil (for drizzling over dumplings)
optional but worth it
- chili crisp or sriracha
- green onions
- drizzle of mayo + sriracha
- hot honey (highly recommend)
Instructions
- preheat oven to 425°F
- in a baking dish, toss coleslaw mix with soy sauce, sesame oil, garlic, and rice vinegar
- spread it out as an even base layer
- place frozen dumplings on top of the coleslaw
- drizzle a little oil over the dumplings
- bake 20–25 minutes until dumplings have crispy bottoms and golden tops and the cabbage is soft and flavorful
- top with green onions, chili crisp, or a drizzle of mayo + sriracha and serve straight from the dish
Working Mom Hacks
no prep required: bagged coleslaw mix and frozen dumplings mean zero chopping, zero thawing. this is a straight from the freezer and fridge situation.
hot honey finish: drizzle hot honey over the dumplings right after they come out of the oven. sweet, spicy, and it makes the whole thing feel intentional.
picky eaters: serve the coleslaw base separately if needed. kids who won’t touch cabbage will still eat the crispy dumplings without complaint.
protein boost: dumplings already have protein built in. add a soft boiled egg on the side if you want more.
Level-Up Versions
hot honey dumpling bake: drizzle hot honey after baking for a sweet and spicy finish.
spicy mayo version: mix equal parts mayo + sriracha and drizzle over everything after it comes out.
chili crisp version: spoon chili crisp over the dumplings right before serving. this is the move if you like heat.
Frequently Asked Questions
Do the dumplings need to be thawed first?
nope, straight from frozen. that’s the whole point.
What brand of dumplings works best?
any frozen potstickers or gyoza work. trader joe’s, bibigo, or whatever’s at your grocery store.
Can I use a different vegetable instead of coleslaw mix?
yes, shredded brussels sprouts or thinly sliced cabbage work the same way.
Can I make this ahead?
best made fresh — the dumplings lose their crispiness if they sit. but the whole thing takes 25 minutes so it doesn’t really need to be made ahead.
