Turkey day schedule

Turkey math uses about 1¼ pounds per person (1½ with leftovers) and counts kids as half. Cook times are the USDA chart for an unstuffed turkey at 325°F, so start checking the temperature at the early end.

    the only one I use

    My foolproof turkey method

This is the herby citrus butter turkey that has never failed me. It’s simple, flavorful and works for beginners. I get our ham from Texas Honey Ham here in Austin.

Before you brine · if your turkey is frozen

If frozen, begin thawing your turkey in the fridge. General rule: 1 day of fridge thaw per 4–5 pounds. The planner above tells you the exact day for your turkey.

    2 days before

Dry brine or wet brine. Brining is the secret to juicy turkey.

    • Dry brine: Salt all over the turkey, including under the skin.
    • Wet brine: Submerge in water with salt, peppercorns, citrus, bay leaves and herbs.
    1 day before
    • Pat turkey dry.
    • Mix softened butter with garlic, herbs, citrus zest, salt and pepper.
    • Rub under the skin, on top of the skin and inside the cavity.
    • Stuff cavity with orange, lemon, onion and garlic.
    • Place uncovered in the fridge for the skin to dry.
    Thanksgiving morning
    • Let turkey sit at room temp 30 minutes.
    • Preheat oven and use a Bluetooth meat thermometer for foolproof cooking.
    • Roast until internal breast temp reaches 160°F, then tent with foil and rest 45–60 minutes. This brings final temp to 165°F without drying out.
    • The USDA safe temperature is 165°F, so check the thickest part of the breast, the innermost part of the thigh and the wing before you carve.

My full Foolproof Herby Citrus Butter Turkey recipe is here.

CarvingUse an electric carving knife for perfect slices.
Check your ovenA Bluetooth thermometer tells you oven ambient temp, which is how I learned mine was off by 50°.
Want it fried?Popeyes will deep-fry your turkey if you want that style.

Turkey still frozen the day before?

Seal it in a leak-proof bag and submerge it in cold water, changing the water every 30 minutes. Plan on about 30 minutes per pound (a 16 pound turkey takes about 8 hours), and cook it right away once it’s thawed. Never thaw it on the counter, in the garage or on the porch.

    cook, delegate or outsource

    Embrace catering and premade items

One of the easiest ways to reduce stress during Thanksgiving is by utilizing catering or premade items from the grocery store. There’s no need to cook everything from scratch. Whether it’s a fully cooked turkey or side dishes like stuffing and mashed potatoes, opting for these can save you valuable time, and you can always add your own flair by garnishing or mixing in a homemade touch.

I used Contigo catering here in Austin! Last year I did several premade Thanksgiving dishes and I’m doing it again this year.

    delegation that actually helps you

    Build your group text

When someone asks “What can I bring?”, do not say “Nothing!” Give specific, easy options. Guests want to contribute.

Type a name next to each category. The time, date and allergy question fill in from your planner.

    • Assign categories: apps, sides, desserts, drinks, ice.
    • Tell guests store-bought is completely welcome.
    • Clarify if they need oven or stovetop space.
    • Ask about food allergies before you finalize the menu, so you’re not finding out at the table.
    • Set out spare serving utensils for guest dishes.
    • Label spaces on your table or counter for each item.
    • Let one or two people be your “cleanup crew” ahead of time so you’re not overwhelmed.

    simple and inexpensive

    Table decor

Places like World Market, Dollar Tree and Amazon offer affordable options. If you’re hosting Friendsgiving, disposable plates are convenient, but for Thanksgiving, nicer plates may add to the occasion.

    • Clip greenery from a bush or tree in your yard and tie around napkins with kitchen twine.
    • Use battery-operated candles so no one reaches across open flames.
    • Add a table runner, seasonal flowers or mini pumpkins for warmth.
    • Use cute charger plates and napkin rings for elevated but inexpensive touches.
    • Pre-set drink stations with wine charms or markers.
    • Add handwritten name cards so every guest has a spot.

Need more seating? I’ve used Facebook Marketplace to buy inexpensive used fold-up tables, or Nextdoor to borrow them from neighbors.

    The kids table + entertainment

    • Cover the kids table in a paper tablecloth and put out crayons so they can draw hand turkeys during dinner.
    • Give each kid a mini pumpkin and stickers instead of markers or carving.
    • Use divided plates for picky eaters and suction bowls for toddlers.
    • A cozy Christmas movie for the kids after dinner
    • A family walk between dinner and dessert
    • My brother brings his guitar and plays music for the kids
    • Keep music light: acoustic, jazz or 70s classics (this is the playlist I use)

    dinner hot, all at once

Keeping food warm without oven chaos

    • Use warming mats or warming trays for casseroles and sides.
    • Keep one oven rack open for incoming dishes.
    • If guests are bringing dishes, ask ahead if they need reheating.
    • Use slow cookers for mashed potatoes, gravy or stuffing.
    • Don’t forget a wine decanter and extra ice. A Pebble ice maker or ice trays come in handy for guests who prefer chilled drinks.

    • Split leftovers into shallow containers so they cool fast.
    • Eat or freeze them within 3–4 days, which is .
    • Set out to-go containers so guests take a plate home.
    • Slow morning with my leftovers breakfast bake or caramel apple cinnamon rolls
    • Decorate the Christmas tree to keep the magic going
    • Turn on a Christmas movie for kids so adults can settle or tidy
    • A family walk to reset energy
    • Local holiday markets or light events if you want to get out

    Thanksgiving hosting FAQ

When should I start thawing my turkey?

Thaw it in the fridge and give it about 1 day for every 4–5 pounds, so a 16 pound turkey needs about 4 days. If you’re brining, count back from your brine day instead of Thanksgiving. The planner at the top of this page gives you the exact day.

How big of a turkey do I need?

Plan about 1¼ pounds per person, or 1½ pounds if you want leftovers. If a lot of your guests are kids, round down.

How long does a turkey take to cook?

At 325°F, an unstuffed turkey takes about 2¾–3 hours at 8–12 pounds, 3–3¾ hours at 12–14 pounds, 3¾–4¼ hours at 14–18 pounds, 4¼–4½ hours at 18–20 pounds and 4½–5 hours at 20–24 pounds. It’s done when it reads 165°F in the thickest part of the breast, the innermost thigh and the wing.

What can I make ahead for Thanksgiving?

Gravy, pie dough, dinner rolls and pecan or apple pie can be frozen 1–2 weeks ahead. Cranberry sauce keeps about a week in the fridge. Stuffing and mashed potatoes can be made the day before, and pumpkin pie should be made the day before and refrigerated, not frozen.

How do I cook Thanksgiving with one oven?

Plan the oven backward from dinner time, bake pies in the morning, and let the turkey’s 45–60 minute rest be the window where sides reheat and rolls bake. Mashed potatoes can stay warm in a slow cooker on low, and finished dishes can hold in a 200°F oven.

How long are Thanksgiving leftovers good for?

Refrigerate leftovers within 2 hours and eat or freeze them within 3–4 days. Frozen leftovers taste best within 2–6 months.

Food safety and cook times: USDA FSIS turkey basics, the USDA roasting chart via Ohio State Extension, and thawing guidance via University of Nebraska–Lincoln Extension. Make-ahead windows: America’s Test Kitchen. Turkey per person: Taste of Home.

Hosting Thanksgiving or Friendsgiving doesn’t have to be overwhelming. Plan ahead, delegate, and take every shortcut you want 🤍
